Tuesdays at the Table...

So I missed Make a Friend Monday.. But I'm squeezing in Tuesdays at the Table. I have a great recipe for you today!! These are the baked beans that I make all the time! Everyone gobbles them up... and they are the King's Favorite as well. With summer right around the corner these are perfect to take to picnic or Bar B Qs...



Yep these Beans were the King's favorite and they come from the book.."Fit for a King" The Elvis Presley Cookbook.. It's a compilation of recipes from Elvis' chef Gladys..

No picture this week though.. I'm still getting use to my new computer and photos aren't going well yet.. I upload them but then I can't find them.. I've been using photos from my old PC I have on a memory stick..lol

Baked Beans

2 pounds Dried Navy Beans
2 quarts cold water
1 medium onion, sliced
1 1/2 teaspoons salt
1/4 cup apple cider vinegar
1 teaspoon mustard (I like dry)
2 Tablespoons packed light brown sugar
1/2 cup molasses
1/4 cup ketchup
Black pepper to taste
1/2 pound salted pork, sliced (bacon)

Wash the beans thoroughly. Place the beans in a saucepan with cold water, cover and heat to boiling. Simmer for about 30 minutes. Drain and reserve the liquid. Place the onion slices in a 10-inch casserole dish. Add the salt, vinegar, mustard, brown sugar, molasses, ketchup and pepper. Add the beans and 2 1/2 cups of the reserved liquid. Arrange the salt pork sliced on top. Cover and Bake @250° for about 7 to 8 hours.

Halfway through baking, remove 2 cups of beans and mash them thoroughly. Blend the mashed beans into the remaining beans. Cover and continue baking. Add water as needed. The beans should be covered with a thick liquid. Remove the cover 1 hour before the beans are done.

Makes 10 servings.

Happy Anniversary!

So Bill and I are celebrating our 13th wedding Anniversary tomorrow.. I can't believe it's been so long.. where did the time go? I know, he was out to sea..lol We also just passed the 14 year mark of being in the Navy as well. And he has been home with me for 4 of those 13 years to have our Anniversary together.

Anyways.. We celebrated today..We exchanged gifts and we had a sitter for a few hours.. We changed our restaurant plans a million times..Finally decided on The Outback and then we saw Crank 2.. What a crazy movie... It was a fun evening and great to get out alone. We keep it kinda low key.. Wicked is coming to Norfolk in May and we have tix so that is what we were planning on doing for a big celebration.

Tuesdays at the Table

I’ve finally had a chance to put together another recipe for you..And since Andrea has Tuesdays at the Table over at My Chihuahua Bites.. this is the perfect day to share it.. If you have a recipe to share or want to see the other recipes posted head over and link up.

I call these Bill’s Stuffed Turkey Burgers.. Mainly because it’s his creation.

Here is what you will need: 1

Stuffing Mix, Ground Turkey, Eggs, Butter, Bread Crumbs, and Cranberry sauce. There is one ingredient that I forgot to photo.. You will need some Season All or Season Salt.

First you will want to make the stuffing according to the package and then set aside.

Then you will want to add your ground Turkey, 1 Egg, about 2 TBS of Bread Crumbs and 1 TBS of Season All to the bowl and Combine. Just get in there and use your hands.

This is a recipe that was eyeballed so adjust your measurements to what you like.. more or less bread crumbs same for Season All. Remember Turkey has No flavor, You need to add it.

Once you have everything combined you will want to form patties.. He likes to make 2 out of a pound of Turkey, but they are huge.. So you might want to make 3 or 4 small ones.. If you are going to make 2 burgers you will need 4 patties..

Then add some of the Stuffing onto of the patties.. If you made 4 you’ll add it to 2 of them etc…

Next you will want to put your extra patties on top to cover your stuffing.. Then seal your Edges…

Then you will want to heat em’ up! Make sure you grease your pan even if it’s non stick add something slick in there.

Check the internal temperature on these you want it to be 165 degrees, but I cook mine to 170..Once it’s there they are done.

Then you are ready to plate and enjoy! These are a meal in themselves so just a veggie or salad is good.

Friend Makin' Monday

1. David Beckham.. What is there to say. He's hot all around and he can play sports!




2. Julian McMahon.. I've been in love with him since he was on Charmed..and now he is on Nip/Tuck.. Did you know he was up for the role of James Bond but got beat out by Daniel Craig.. What a bummer I would of become a Bond fan!



3. Nicolas Cage.. Love him!! My friend Lisa and I fight over the rights to him..lol. Best Nic movie Face/Off!



4. Johnny Depp.. Who doesn't like Johnny? I love Captain Jack Sparrow and he was great in Chocolat. He is just great for the eyes..



5. Gerard Butler.. Oh Gerard! I first discovered him in the Movie Phantom of the Opera back in the 90's..He can sing too..And he was awesome in 300 and PS I love you..He's been in well over 30 movies.I think what I love the most is his accent.

I think some of my crushes have dark hair and tattoos in Common..lol

Movie Review Monday..



I've only got one for you today... Not much out and what is seems to be on a long wait from Netflix these days..



In a Catholic elementary school in the Bronx, Sister Aloysius (Meryl Streep) begins to have doubts about one of the priests, Father Flynn (Philip Seymour Hoffman), who seems to have become overly involved in the life of a young African American pupil. But Flynn isn't the only one she has doubts about. Is she overreacting to the situation or is there a truth that needs to be discovered? John Patrick Shanley's drama was nominated for five Oscars and co-stars Amy Adams and Viola Davis.

This was good I give it 5 stars...Meryl Streep was yet again at her best! A must see.

Play-Dough?

Is that how you spell it? Anyways I'm not a fan.. A Couple reasons why!

1. It's messy to clean up, it gets into the carpet and very hard to get out.
2. Kids wanna play with it, but then they don't want to clean it up!
3. They don't make it like the used too.. It drys out really fast.

Elvis got some at Halloween last year and he played with it.. and then it disappeared when nobody was looking..lol. Well ever since I was the mean mommy who wouldn't let my kids play with it.. So at Christmas I got Elvis a small set and he loved it..Did pretty good with cleaning it up for awhile.. Then a mess was made in my rug and all over.. And he threw a fit when it came time to clean up. So it was put away for a rainy day.

Rainy day came and Daddy let him get into a closet where it was. So I said he could play with it the next day. Well Friday came and he got it out and 3/4
of it was rock hard. He played with what he could and then we threw it away.. I said we'd go get more when daddy came home from work.

So he and I went to the PX and kept asking for the Ice Cream Play dough.. So we found one and brought it home.. He and Bill played for a few hours. And he didn't do to bad at cleaning up..Then comes Saturday morning.. Elvis is up at 8am and I'm not ready to get up.. I remember hearing him say something about play dough and I said No later when I go downstairs..

A few hours later when I go downstairs I find Play dough in the living room, on the couch in the rug.. Now he did set it up on the table but it was everywhere between the table too. He swears that Austin helped him do it! I wasn't happy and play dough when away for the day!

Bill comes home and gets it out for him! Why not right? I'm the mean mommy and I'll just be the one who gets to clean up again.. So they play then Elvis disappears up stairs and doesn't want to clean up neither does Bill.. So Mommy was left with it again!! It was everywhere... So Mommy has hidden the Play dough and we'll just see who finds it.. (insert evil Mommy Laugh!)

Don't get me wrong I know he likes playing with it.. But when you are alone as much as I am and never get a break from cleaning anything.. You get Pi**ed off at a non normal regualar everyday mess. I mean you can only prepare for so many things to clean up in a day right?

Where did the week go..

Geezz Wasn't it just Monday? Not much going on here in the Endress house.. Bill is still working crazy hours..I swear he works more now then he did before they moved him.. Kids went back to school on Tuesday.. That was a joyous occasion, I was very happy. I have some pictures on my camera I need to download I'll work on that this weekend. Hope everyone is doing well.

Movie Review Monday!!




Based on the comedic memoir by Danny Wallace, this film stars Jim Carrey as Carl, a man who, as an antidote to unhappiness, resolves to say "yes" to everything that comes his way. Initially, Carl's new practice proves successful in lifting his spirits, but soon he is confronted with unexpected and seemingly unbeatable challenges stemming from his unique self-imposed regime. Zooey Deschanel co-stars as Allison, Carl's love interest.

* I didn't like it that much.. It had a lot of slow parts and it just wasn't typical Jim Carrey. Overall it was a maybe a 3.. If you have time watch it but I wouldn't go out of my way you wouldn't be missing much.



Skeeter Bronson (Adam Sandler) is a down-on-his-luck guy who's always telling bedtime stories to his niece and nephew, and whose life is turned upside down when these fantastical stories suddenly turn into reality. Now, all the outrageous characters and situations that Skeeter has ever imagined have morphed into actual people and events in his life. But can he manage his own unruly fantasies now that they've come true?

This was a great kids movie and I enjoyed it too! I give it a 5 all the way. Adam Sandler does what he does best and you will see the faces of all his friends that are in his other movies.I think Elvis watched it 3 times and keep wanting to see it again.

Happy Easter!!



I hope everyone had a wonderful day!..The kids had a much better day then yesterday.

Here are some pictures from our day. We woke up to Easter Baskets and then this afternoon we did an egg hunt. Elvis devoured his entire Chocolate Bunny in one sitting and then the rest of the candy in the house!









School starts again on Tuesday.. I can't wait!! Have a great week.

Banging my head.....

So I'm having a horrible day..Bill and I got a sitter and went out for lunch it was nice to finally have some alone time. He has been working so much. This was the first time for the sitter and she did good and we will use her till she moves, which is always inevitable when you are military!
But Austin has been having meltdown after meltdown since he got up this morning. He was okay for the sitter of course they are always good for the sitter right?

Lately his behavior is erratic and out of control. This was the worst move we have ever done and he is suffering more everyday. He doesn't want to go to school or get on the bus. He has a meltdown almost everyday. I've been waiting for ever to get the Doctors appointment to get his ABA therapy set back up.. But I mean what a pain 3 months to get an appointment.

We found out that we are Category 5 with EFMP.. That's the Military Exceptional Family Member program. It's used to help families with Special needs and to help the service member. We've been trying to get 5 for a few years now and just keep getting 4.. 5 means you don't have to move! Yeah!! We didn't have to move from FL in November.. But Bill got orders at the end of October and our EFMP renewal wasn't processed until mid November and they missed each other and we just figured we'd get 4 since that's what we've had for the last 6 years.

It's very hard when you move a child that's Autistic.. You are taking him away from his routine and he has to start all over and we've moved 2x's since Dec. of 07'. Bill has been working 14 hours a day 6 days a week and it's wearing me out!

When we got to the Doctor on Monday I'm going to see if we can get a letter saying that we need to go back to FL.. That is what would be best for Austin. We had the best school and the greatest ABA therapist. So keep your fingers crossed, because I'm losing my mind here and Austin is only going to get bigger and we have to get this behavior under control..

Oh and don't get me started on the 12 year old with Attitude I have in the house.. Oh wait he's actually 4! Yeah he talks like a 12 year girl with major attitude.. I can't believe how the kids talk around here. He has never talked like this. And I've heard some of the kids at the bus stop talking to their parents.. WOW!!How times have changed..

Monday, Monday!!

No Movie Reviews for you today.. Sorry! I didn't check the Netflix list and last week 4 kids movie showed up at once.. That was a real bummer..lol.Usually I have it set up so we get 2 for the kids and 2 for us. I wanted to go see "Adventureland" but with Bill's schedule it didn't happen. Maybe this week.

Bill went into work this morning at 3am and came home around 9:30am and is off tomorrow.. Wow!! I still won't believe it till I see it though. Then he is suppose to have Saturday and Sunday off as well. Yeah!! We'll see.

I went to the gym today, replaced the Basil plant I destroyed by leaving out in the sun to long..LMAO!! It was going to happen eventually. Used my 50% coupon for Micheal's and that was about it. Exciting huh..It was for me.. I was kid free the whole time. I did find us a babysitter so that is super news.. She is a but young but she has taken the babysitting class from the Red Cross so major bonus.

So does anyone else have a 4 year old that likes to over stuff their mouth when eating? I started having to tell him small bite, chew and swallow...He seems to be getting it but you really have to stay on him. I gave him these huge strawberries and said take small bites.. I was busy doing something and he got down from the table when he was all done and I saw a glimpse of him and I said "what happen?" I thought he broke out in a rash or something.. Here it was the berries all over his face. He must of ate those berries in several small bites!

Just another day..

Well it seems that way anyways. Bill has been working non stop, His section got switched on Thursday so after working all week he went in Friday with a new section and has to work 12 hours a day and all weekend! We just had duty last weekend and were looking forward to having this weekend free, not happening.. So since last Sunday the 29th he has worked every day from 6am till 7pm and will do this until Monday when he will have to go in at like 3am and then got home around 10am and have off Tuesday and go back and do it all over for Wednesday, Thursday and Friday and then have Saturday and Sunday off.. Does that make sense to anyone? I didn't think so it doesn't make sense to me either. I just know I'm not liking this at all!

I'm been busting my behind all week getting he new uniforms ready for Bill. This is the second uniform change the Navy has had since we've been in. But this one is a killer. Everything is new except the Dress uniform and they are changing in a year or two as well.. So that's new working & utilities I've had to get ready. The worst part about it is we don't live on a Navy base here, so I have to go to the small base up the road and they are out of everything..I've been running around like a crazy person. So finally I gave up and called and ordered everything online and took them to a Seamstress off base.

Yes they are Camo! So if they ever need to hide themselves in the middle of the Ocean they are good to go...LMAO!! They really aren't that bad in person..and the colors they choose is suppose to be the colors of all the uniforms together. One plus I don't have to iron anymore.. I'm doing the happy dance!! I just washed them and pulled them out of the dryer and they were good to go..So awesome!

Rain, Rain, Go Away…

We’ve had rain for over a week now! It’s making everything a mess. Yesterday it was beautiful out and by midnight it was coming down again.

Kids are getting restless being inside. A few weeks ago we had some really nice weather and they were water coloring outside and I tried to get some photos…..

Austin is not a fan of the camera.. He used to love having his picture taken when he was a baby.. But these days not happening.

Austin is all technical about how the paint works and why does the water turn colors.. I was just excited to see him sit and do an art activity.

It other news here… Spring Break Starts this afternoon. Kids will be out of school for a little over a week. Not sure if i will survive? But I might have some help. Bill was moved to the galley finally on the ship and he has a work schedule where it’s 5 days on 2 days off and then 5 days off and 2 on or something like that..still getting the details.. He will be working about 12 hours a day when he does work. No more overnight duty though. Bonus!

We just got  our first duty free weekend in a month.. and they switched him yesterday so that means he will work all weekend.. Go figure! Hopefully he will have some days off next week though.
