
So I missed Make a Friend Monday.. But I'm squeezing in Tuesdays at the Table. I have a great recipe for you today!! These are the baked beans that I make all the time! Everyone gobbles them up... and they are the King's Favorite as well. With summer right around the corner these are perfect to take to picnic or Bar B Qs...

Yep these Beans were the King's favorite and they come from the book.."Fit for a King" The Elvis Presley Cookbook.. It's a compilation of recipes from Elvis' chef Gladys..

Baked Beans
2 pounds Dried Navy Beans
2 quarts cold water
1 medium onion, sliced
1 1/2 teaspoons salt
1/4 cup apple cider vinegar
1 teaspoon mustard (I like dry)
2 Tablespoons packed light brown sugar
1/2 cup molasses
1/4 cup ketchup
Black pepper to taste
1/2 pound salted pork, sliced (bacon)
Wash the beans thoroughly. Place the beans in a saucepan with cold water, cover and heat to boiling. Simmer for about 30 minutes. Drain and reserve the liquid. Place the onion slices in a 10-inch casserole dish. Add the salt, vinegar, mustard, brown sugar, molasses, ketchup and pepper. Add the beans and 2 1/2 cups of the reserved liquid. Arrange the salt pork sliced on top. Cover and Bake @250° for about 7 to 8 hours.
Halfway through baking, remove 2 cups of beans and mash them thoroughly. Blend the mashed beans into the remaining beans. Cover and continue baking. Add water as needed. The beans should be covered with a thick liquid. Remove the cover 1 hour before the beans are done.
Makes 10 servings.
