Tuesdays at the Table!

I'm so late getting this post up.. Been a crazy day here! I'm linking up with Cole over at all the Small Stuff for Tuesdays at the Table...

This weekend I created a recipe from scratch and it was so YUMMY! I love when that happens...

This is Roasted Potatoes & Asparagus with Boursin & Parmesan cheese. I made these in a toaster oven so you may need to adjust the temperature in your regular oven but with potatoes 450 is usually where you want it to be to roast.

Here are your ingredients:

Serving for 2-3.. 5 Small potatoes, Asparagus, a few green onions, 2 cloves of Garlic some Parmesan and Boursin Cheese.

Line a baking sheet with tin foil and spray generously with non stick spray. Dice the potatoes up so they are all about the same size and add to foil lined sheet and toss with 2 TBS Olive Oil and your Garlic (crush or Mince it).

Stick this into the oven for 25 minutes tossing once about 15 minutes into it... Then dice up your Asparagus and add to the mixture with the Green Onions (Dice).

For the Asparagus I cut off the woody ends and then cut them into smaller pieces.

Place back into the oven for another 10 - 15 minutes.. I like my Asparagus to have some crunch so I did 10 minutes total cooking time was 35 minutes. Remove from oven and add some of the Boursin Cheese...

Mix around until the cheese melts into a sauce like consistency...

Then add some Grated Parmesan cheese and toss!

You'll also want to add salt & Pepper to taste.. I did it after the cheese because the cheese has salt in it.

We had these with some Grilled Salmon.. but they are great alone as well.

Head over to Cole's Blog and see what she is making today and hop around to see what everyone else is making a well.. you never know when you will find a new recipe!
